What is the difference between DDR2 vs DDR3. My Apple specs call for DDR3 but everything else matches for this memory card to upgrade

There are several differences such as speed and electrical requirements. Most noticeable will be the physical memory. You will not be able to install a DDR2 chip on a DDR3 slot or DDR3 chip on a DDR2 slot.
